Healthy Avocado Pasta
Veggie Pasta (12 oz)
1 box of fresh basil leaves (.66 oz)
1 cup cherry tomatoes
1/3 cup olive oil
(Optional: Salt / pepper / fresh lemon juice)
Cook the vegetarian pasta and drain.
To prepare the sauce, combine avocados, basil leaves and olive oil in a blender or food processor. Mix until smooth.
Cut all tomatoes in half.
Combine pasta, avocado sauce and tomatoes. If desired, add salt / pepper / fresh lemon juice for taste. Serve hot.
